Our Story

We’re the Symonds family, Matt, Jillien, and our three kids, and we call Rathlyn home.


Our 6,200-acre property lies 30 km south-east of Wandoan, on the rich black-soil country the Western Downs is famous for.

Rathlyn is organically certified with SXC and known for producing exceptional grass-fed beef. Our cattle graze freely on Bambatsi, Queensland Blue, Gayndah Buffel and Marine Couch, the kind of pasture that builds rich flavour from the ground up.

We’re proud to raise our animals naturally. No antibiotics, no grain, no shortcuts. Just low-stress handling, clean pasture, and plenty of space under a big Queensland sky.

The Black Hide Difference

At Black Hide Meat Co., we’re driven by one goal: to produce a steak people want to eat every single day. Not too fatty. Not too lean. Just tender, rich, flavour-packed beef raised the right way.

Our F1 Wagyu × Angus breeding program combines the best of both breeds:

  • Wagyu for heat tolerance, resilience, and the ability to thrive in tougher country.

  • Angus for temperament, mothering ability, and consistently tender eating quality.

Our genetics can be traced directly back to the renowned Wagyu sire Itoshigenami, giving our herd elite quality without the heaviness of grain-fed marbling.

Everything we do is focused on producing beef that’s:

  • Tender without excess fat

  • Ethically and organically raised

  • Grown on clean grass and wide-open country

Because great beef starts long before it reaches the butcher, it starts in the paddock. With happy cattle, healthy pasture, and a family that genuinely cares.

Supply & Availability

Reliably supplying premium grass-fed beef across Southeast Queensland.

Our cattle are processed locally at Chinchilla, and a trusted freight company transports hanging carcasses directly to:

  • Brisbane

  • Sunshine Coast

  • Gold Coast

We currently produce around four certified organic carcasses per week, with capacity to expand as our breeder numbers grow.


This coming season, we expect 125 F1 calves, with acreage to comfortably increase our herd to 200 breeders.

Boxed Beef Options

While our animals are raised organically, our butcher is not yet certified. Because of this, we can offer:

  • Certified organic carcasses (hanging)

  • Non-organic boxed beef - still raised organically

  • F1 carcasses in various sizes (available on request)
